Sweet Potato Bread! - I grew up on this ...

What a treat, baked in 15 minutes!
1 cup of sweet potato cooked and mashed 2 - 2.5 cups of strong flour 2 tbsp of olive oil 1 tsp of salt 1 sachet (7g) of dried bread yeast
Mix all ingredients thoroughly together until it forms a dough. The leave the dough to rest in the fridge over night. The next day: knead the dough for 1 minute, then shape the bread how ever you would like to bake it in and let it rise for another 45 minutes at room temperature. After, bake it in a 250° pre-heated oven for 15 to 25 minutes.
The best way to know how bread is done, is when the top looks crusty and brown!
