Broccoli & Cauliflower Bake - Another classic made Vegan

🤤 Never goes out of fashion.

Ingredients:

2 heads of broccoli

boiled cauliflower head

1 litre of unsweetened soy milk

2 tbsp margarine

1 tsp English mustard

1 tbsp salt

1 lemon

1 tsp sugar

1 tsp turmeric

6 tbsp corn starch

2 tsp dried chives

1 tsp garlic powder

Process: Boil the florets of 2 heads of broccoli and a cauliflower. Then, drain the water, place them in an oven tray and season them with salt and pepper. For the sauce, boil the litre of soy milk. Once its boiling, add the margarine, the mustard, salt, a sprinkle of turmeric for colour, squeeze the whole lemon, the sugar and lastly the corn starch ( make sure you dissolve the corn starch in half a cup of water before adding it to the sauce). Stir the everything until it thickens to a custard-like mixture. After that, add the dried chives, the garlic powder and mix well. Now, pour the sauce on top of the vegetables and sprinkle some more chives and garlic powder and finish with a drizzle olive oil. Bake for 20 minutes in a preheated oven at 250c, then grill till it gets to golden brown at the top.


Tips:

This bake can be the filling for a pie or even added to plain pasta for a more hearty meal. Life is delicious 😋 Enjoy 🥦
