Stuffed Steamed Buns - Orient inspired

You'll require a steamer for this! This is a super versatile recipe where you can substitute ingredients to your taste. 🥣

Ingredients🥟:

2 cups all-purpose flour

1 cup Water

1 tsp salt

2 tsp sugar

1 sachet dried bread yeast (7g)

1 head of white cabbage

1 carrot

1/2 a leek

1 tbsp salt

Chillies (however much heat you like)

1/2 cup chopped up Parsley

1/2 cup chopped up Coriander

1 tbsp lime pickle

3 cloves of garlic

3 tbsp sweet chilli sauce

2 tsp sesame oil

4 tsp cooking rice wine (found in Chinese grocery stores)

6 tsp dark soy sauce

1/2 lemon

1 tbsp olive oil

100ml of water


Process:

Mix it all thoroughly together until a dough is formed. For the stuffing finely chop the cabbage, the carrot, the leek and after sprinkle the chopped vegetables with with the salt. Leave it to marinate for 15 minutes. Then, place the vegetables on a clean table cloth, bring the edges together and squeeze out as much water as you can.After that, divide the dough in 4 and form them in balls. Push the centre of the dough down with your thumbs to shape the dough like a cup (make sure to that it's thick). Stuff the centre of the dough cups with a generous amount of the vegetables and seal them well by bringing the edges together, slightly twisting and tucking them under the bun. Place them straight in your steamer (I have a bamboo one but it could be done in any steamer). Steam them for 20 minutes. Afterwards, leave them to rest for 5 before removing the lid. For the sauce , finely dice the chillies, parsley, coriander, lime pickle and garlic cloves. Put it all in the bowl you'll have the sauce in. To that add the sweet chilli sauce, sesame oil, cooking rice wine, dark soy sauce, squeezed lemon juice, the olive oil and 100ml of water. Mix everything well and adjust seasoning if needed.

Tips:

Take a piece of foil, oil it and place it under the bun, otherwise it will stick to your steamer as it cooks. Let me know how it went! Use the #tgkchallenge 😚
